Mexican food is influenced by seven regional cuisines. The “El Norte” cuisine reflects the ranch culture of grilled beef, flour tortillas and a wide variety of cheeses. The Mexico’s long Pacific coast with Guadalajara as its gastronomic centre, is known for beef, mutton or pork stew with chili peppers. While the immense Bajio plateau that resembles the central Spanish plains, has contributed with rice, pork and spices and its sweet desserts. 

The deep valleys of the south pacific coast, boasts of the most indigenous of Mexico’s provincial cuisines. Oaxacan cuisine is known for seven varieties of sauces or flavours. Chocolate is another interesting component, mixed with spices and consumed as a beverage. The food of the Yucatán peninsula and Gulf of Mexico is based on Mayan food with influences from Cuba and other Caribbean islands. While cuisine in central Mexico City is pot-puree of regional styles.

Discover the roots of Mexico’s capital which lie in the Historic Centre. It is here where you will find international art museums, Palacio de Bellas Arts, Cathedral Metropolitan, Templo Mayor and the National Palace. One day, explore the surrounds like; the ancient Aztec pyramids of Teotihuacan or paddle down t he ancient Aztec waterways of Xochimilco. Explore the charming neighbourhoods of San Angel and Coyoacan for cultural charm or visit Polanco and La Roma for world-class restaurants, numerous parks and green areas, monuments, and museums.

Along the way, stop in favourite taquerias and food stalls, and perhaps visit an ice cream parlour to sample unusual flavours such as mamey (a tropical fruit) and rompope (egg nog). Also, enjoy private tequila tasting to learn about Mexico’s most famous distilled spirit.

Next, visit Puebla, one of the five most important Spanish colonial cities in Mexico. Containing more than 70 churches in the historic city centre alone, Puebla maintains its close ties to colonial Spain through its architecture and famous azueles, which are painted ceramic tiles.  Exclusive boutiques and restored buildings add to the modern melding of worlds both past and present. Also enjoy a cooking class, explore the local food markets, and perhaps browse for locally produced Talavera ceramics. One day, enjoy a private excursion to Cholula, a vast archaeological site. 

Continue into the state of Mexico that is host to more indigenous languages than anywhere else in the country – Oaxaca. This largely mountainous and rugged region is home to a great many culturally diverse indigenous communities and offers visitors great insight into native food and traditional arts. One day, travel to the nearby valley to tour the archaeological ruins of Mitla and visit indigenous markets to find unique handicrafts and woven crafts. This tour can be further customised to your interests or dietary restrictions.

Getting There The only direct scheduled flights from the UK to Mexico are from London Heathrow to Mexico City or London Gatwick to Cancún, both with British Airways. Flying from anywhere else in Britain to Mexico, will require change of planes somewhere. If flying via the US, it’s worth checking if your transatlantic carrier has an airpass deal for non-US residents – most major US airlines do – by which you purchase coupons at a flat rate for a certain number of flights in North America. The pass will usually also include one or more destinations in Mexico and Canada.

When to go November to May: This is late winter in Mexico and the best time to visit. January to March are the months to visit Baja California to see the visiting whales. Beginning June, the rains begin to make their presence known, mostly in the form of an afternoon storm. July is the heart of Mexico's rainy season, though rains still accustomed to its afternoon routine, cooling down the temperatures. In August and September, rains become heavier, particularly on the Pacific Coast. By October, rains begin to ease a little but humid condition remain across much of the country.
